Here are the results of the Spring Bake Off Tart challenge!

Gold Awards went to Charlotte and Nathan.

The judges said that Charlotte’s heart tartlets had a crisp, buttery pastry with  a subtle flavour mixed in with the cream that complemented the tang of the strawberries. Nathan’s salmon pastry creation had an excellent combination of flavours with a delightful creme fraiche sauce.

Silver awards went to Georgia and Michael.

Georgia had also made stunning strawberry tarts with a perfect pastry and Michael’s scrumptious apple turnover filling went well with the delicate, crisp pastry cases he had created.

Bronze awards went to Morgan and Harlie.

Morgan’s tarts were described as having a refreshing zingy flavour. Harlie’s cheese savouries were crumbly and and crunchy with just the right amount of cheese flavouring.

So well done once more to the Spring Bake Off team, you all managed to create a fantastic bake and we look forward to the final signature bake challenge on its way soon.

SPRING PASTRY MASTER CLASS

The Pastry Master Class was a great success with the Bake Off Team. Mr Jones, our pastry expert, talked us through making a delicious roasted Mediterranean vegetable tartlet.DSC01789

First vegetables were roughly chopped and roasted in a deep sided baking tray for about 20 mins.

To make the pastry, butter cubes were rubbed into the sifted flour with a pinch of salt. Water was added a little at a time to combine the mixture together. The pastry was then placed in the fridge for around 30 mins to cool and rest.

While the pastry was resting we created cardboard templates to cut the tartlet shapes.

The pastry was then rolled out to about 1.5 cm thick and shapes were cut out in the dough using the templates, using a knife or pizza wheel cutter.

Using a small amount of water, the 2 parts were stuck together to create a pastry case, then placed onto a greased baking tray.

We then spread a small amount of tomato puree on the bottom of the pastry case, then topped with the roasted vegetables, basil and mozzarella.

The tartlets were finally baked for 15-20mins, depending on size.  DSC01778
